Chickpeas, Spinach, Chilli & Feta Salad
Serves 4 - 6
You will need
- Cooking oil for frying
- Red chilli, deseeded, chopped - 1
- Onion, chopped - 1 medium
- Garlic, crushed - 2 t
- Chickpeas, drained - 410g tin
- Olive oil - 60ml
- Apple cider vinegar - 60ml
- Baby spinach, coarsely chopped - 100g
- Coriander, fresh, chopped - 2 T
- Parsley, chopped - 1 T
- Feta cheese, crumbled - 100g
- Spring onions, chopped - 2
- Mint leaves, chopped - 2 T
- Sundried tomatoes, chopped - 4halves
- Salt to taste
- Black pepper to taste
Method - Fry onions, chilli and garlic in oil
- Soak tomatoes in luke warm water before chopping
- Add chickpeas, olive oil and apple cider vinegar – place in bowl to marinate 1hour
- Add remaining ingredients and marinate for 10min
- Serve
